Vegan Chocolate Peppermint Bark

Perfect for a quick and easy holiday treat.

Prep: 10 minutes - Chill: 20 minutes

Ingredients:


  • Dark vegan chocolate 400g


  • Coconut oil 2 tbsp


  • Peppermint Essential Oil 1 tsp


  • Crushed candy canes 1/3 cup


  • Toasted almond slices (optional)


(This recipe makes 12 pieces.)


This can be paired with hot cocoa or sprinkled over vegan ice cream for extra indulgence.


Instructions:

  • Melt dark chocolate with coconut oil in a double boiler or microwave (in 30-second intervals, stirring in between until smooth).

  • Stir in peppermint extract once the chocolate is fully melted.

  • Pour the melted chocolate onto a lined baking sheet, spreading it evenly.

  • Sprinkle crushed candy canes and toasted almond slices (if using) over the chocolate.

  • Place the baking sheet in the fridge and chill for 20 minutes, or until the chocolate hardens.

  • Break the bark into pieces and serve.
