Vegan Chocolate Peppermint Bark
Perfect for a quick and easy holiday treat.

Ingredients:
Dark vegan chocolate 400g
Coconut oil 2 tbsp
Peppermint Essential Oil 1 tsp
Crushed candy canes 1/3 cup
Toasted almond slices (optional)

This can be paired with hot cocoa or sprinkled over vegan ice cream for extra indulgence.
Instructions:
Melt dark chocolate with coconut oil in a double boiler or microwave (in 30-second intervals, stirring in between until smooth).
Stir in peppermint extract once the chocolate is fully melted.
Pour the melted chocolate onto a lined baking sheet, spreading it evenly.
Sprinkle crushed candy canes and toasted almond slices (if using) over the chocolate.
Place the baking sheet in the fridge and chill for 20 minutes, or until the chocolate hardens.
Break the bark into pieces and serve.
