Teriyaki Tofu Poke Bowl
Perfect for a quick and easy snack or meal.
Prep: 10 minutes - Cook: 20 minutes
Ingredients:
Firm Tofu 400g
Corn starch 1/4 cup
Vegetable oil 1/3 cup
Grated ginger 1 tsp
Onion 1
Mirin 2 tbsp
Soy sauce 2 tsp
Dark soy sauce 2 tsp
Brown sugar 1 tbsp
Sesame oil 1 tsp
Water 1/2 cup
Spring onion 1
Steamed rice
Toasted sesame seeds
(This recipe serves 4 people.)
This can be served with avocado, cucumber, broccoli or any other extra vegetables for more flavour.
Instructions:
Pat tofu dry with paper towel an cut in to 2cm cubes
Lightly coat the tofu in corn starch (the corn starch will get rid of the moisture in the tofu)
Heat vegetable oil in a pan over medium heat.
Fry tofu pieces until golden brown. Remove from pan and set aside
Finely cut onions
Cook ginger in the pan until fragrant before adding onion, mirin, soy sauce, dark soy sauce, brown sugar and sesame oil
Bring it to a simmer while dissolving two teaspoons of corn starch in 1/2 cup of warm water
Add the cooked tofu and corn starch to the mixture and toss it f or a minute until the sauce is thick and covers all the tofu
Serve over white rice and top with toasted sesame seeds
