Sweet Potato & Chickpea Buddha Bowl for Valentine's Day

Ingredients:
2 medium sweet potatoes, peeled and cubed.
1 can chickpeas, drained and rinsed
1 tbsp olive oil.
1 tsp ground cumin.
1 tsp smoked paprika.
Salt and pepper, to taste.
1 cup cooked quinoa or brown rice.
1 avocado, sliced.
1/2 cup cherry tomatoes, halved.
2 tbsp tahini.
1 tbsp lemon juice.
1 tsp maple syrup (optional).
Fresh cilantro, for garnish.
Instructions:
Preheat your oven to 400°F (200°C).
Toss the cubed sweet potatoes and chickpeas in olive oil, cumin, smoked paprika, salt, and pepper. Spread them evenly on a baking sheet and roast for 25-30 minutes, or until golden and tender.
While the sweet potatoes and chickpeas roast, prepare your quinoa or rice and slice your avocado and tomatoes.
In a small bowl, whisk together the tahini, lemon juice, and maple syrup (if using) to create the dressing.
Once the sweet potatoes and chickpeas are roasted, assemble your bowls by layering quinoa or rice at the bottom, then adding the roasted sweet potatoes, chickpeas, avocado slices, and tomatoes.
Drizzle with tahini dressing and garnish with fresh cilantro.
