Garlic-infused Broccoli and Chickpea Stir-fry

Perfect for a quick easy family dinner.

Prep: 15min - Cook: 15min


Ingredients:

  • Onion 1

  • Garlic 5

  • Broccoli medium head

  • Canned chickpeas 1

  • Vegetable broth 1/3 cup

  • Soy sauce 3 tbsp

  • Rice vinegar 2 tbsp

  • Maple syrup 2 tbsp

  • Corn starch 1 tbsp

  • Onion powder 1 tsp

  • Sweet paprika 2 tsp

  • Cayenne pepper 1 tsp

  • Fresh ginger 1 tsp

  • Olive oil


(This recipe serves 4 people)





Instructions:

  • Heat oil in a pan over medium heat, then sauté the onion, garlic, ginger and the spices for 3-4min

  • Add broccoli florets and vegetable broth. Fry until the broccoli tender but not soft. (approx. 10 min)

  • Meanwhile: prepare the sauce in another on bowl, combine water, soy sauce, vinegar, maple syrup and corn starch

  • Pour the sauce into the pan and add the chickpeas

  • Bring to a boil until the sauce simmers then fry for a few more minutes

  • Serve by itself or with rice and enjoy!!!








This dish is the perfect healthy and hearty meal to have with family and friends as it is very filling and balanced as well as being absolutely delicious.
