Garlic-infused Broccoli and Chickpea Stir-fry

Perfect for a quick easy family dinner.
Prep: 15min - Cook: 15min
Ingredients:
Onion 1
Garlic 5
Broccoli medium head
Canned chickpeas 1
Vegetable broth 1/3 cup
Soy sauce 3 tbsp
Rice vinegar 2 tbsp
Maple syrup 2 tbsp
Corn starch 1 tbsp
Onion powder 1 tsp
Sweet paprika 2 tsp
Cayenne pepper 1 tsp
Fresh ginger 1 tsp
Olive oil
(This recipe serves 4 people)
Instructions:
Heat oil in a pan over medium heat, then sauté the onion, garlic, ginger and the spices for 3-4min
Add broccoli florets and vegetable broth. Fry until the broccoli tender but not soft. (approx. 10 min)
Meanwhile: prepare the sauce in another on bowl, combine water, soy sauce, vinegar, maple syrup and corn starch
Pour the sauce into the pan and add the chickpeas
Bring to a boil until the sauce simmers then fry for a few more minutes
Serve by itself or with rice and enjoy!!!
