Festive Detox Potato Salad
This salad is light yet flavourful and complements any Christmas meal!
This refreshing salad is not only a flavourful addition to your Christmas table but also supports gentle detoxification—perfect for grounding your energy after a Reiki session or holiday indulgence.

Ingredients:
6 medium potatoes, peeled and diced
1 green apple, diced ( Green apples are great for a tangy flavour, for a sweeter salad use red apples, even better, you can use both)
1/2 cup green olives, sliced
1/2 cup celery, thinly sliced
1/4 cup red onion, finely chopped
1/4 cup vegan mayonnaise
1 tsp Dijon mustard
1 tbsp apple cider vinegar
2 tbsp fresh parsley, chopped
Walnuts for decor ( optional )
Salt and pepper to taste
Instructions:
Cook Potatoes: Boil diced potatoes in salted water for 15–20 minutes, until tender. Drain and let them cool.
Combine Ingredients: In a large mixing bowl, gently mix the cooled potatoes, green apple, olives, celery and red onion.
Make the Dressing: In a small bowl, whisk together vegan mayo, Dijon mustard, apple cider vinegar, salt, and pepper until smooth.
Toss Together: Pour the dressing over the potato mixture and toss gently to coat evenly.
Chill and Serve: Garnish with fresh parsley, a few walnuts and adjust seasoning as needed. Chill in the fridge for at least 30 minutes to let the flavours meld.
